If you’ve been around here for a minute, you know I love a good cranberry recipe, especially during the holidays. Between my cranberry crumble bars, fizzy cranberry ginger beer mocktail, and slow cooker cranberry BBQ meatballs, I love using cranberries in as many ways as possible, and these cranberry brie bites are officially joining the rotation.
They’re festive, flavorful, and ridiculously easy to make. I love serving them as a quick pre-dinner bite at festive holiday parties or as a fun addition to a snack board. They’re one of those appetizers that feel fancy but come together in under 30 minutes, and trust me, they will steal the show.

Ingredients You’ll Need
- All-Purpose Flour: use this to prevent sticking when rolling and shaping the crescent roll dough.
- Crescent Roll Dough: we’re using one 8-ounce tube of crescent roll dough. Any brand will work.
- Brie: you’ll need 8 ounces of brie for this recipe. You can usually find it in the specialty cheese section of your local grocery store.
- Cranberry Sauce: I use my healthy homemade cranberry sauce, but any whole berry sauce will work. Not a fan of cranberry? Use raspberry jam, fig preserves, or apple butter for a different taste. You can also amp up the heat with a spoonful of red pepper jelly or a dash of red pepper flakes.
- Chopped Pecans: these pair well with the sweet, savory filling, and add a little crunch.
- Honey: for the perfect finishing touch of sweetness.
- Fresh Rosemary: can’t find rosemary? Use fresh thyme instead!
- Sea Salt: I use sea salt in the filling and sprinkle it over the finished cranberry brie bites to finish them off.


How to Make Homemade Cranberry Brie Bites in About 20 Minutes!
- Slice the crescent roll dough into squares, and arrange them in a greased mini muffin tin.
- Place a slice of brie in each muffin cavity, followed by a spoonful of cranberry sauce.
- Mix the remaining ingredients in a small bowl, and spoon the mixture over each bite.
- Bake until the pastry is golden brown.
- Sprinkle flaky salt on top, add a little extra rosemary, and enjoy!

Ingredients
- avocado oil or avocado oil spray
- 1–2 tablespoons all-purpose flour
- 8–oz tube crescent roll dough
- 8–oz wheel of brie
- 3/4 cup whole berry cranberry sauce (not jellied)
- 1/2 cup chopped pecans
- 2 tablespoons honey
- 1 tablespoon chopped rosemary
- pinch of sea salt
Instructions
- Preheat the oven to 375°. Grease a mini (24-cup) muffin tin with avocado oil or avocado oil spray. On a lightly floured surface, roll out the crescent dough and pinch together the seams. Use a sharp knife or pizza cutter to cut the dough into 24 squares. Place squares into the prepared muffin tin.
- Cut the brie into small bite-sized cubes and place each piece inside the dough cups. Top each piece of brie with a spoonful of cranberry sauce.
- Add the chopped pecans, honey, pinch of sea salt, and chopped rosemary to a small bowl and stir until well combined.
- Top each bite with a bit of the pecan mixture.
- Bake the brie bites for about 15 minutes or until the pastry is golden brown. Top the bites with flaky sea salt and more fresh rosemary before serving.
Notes
How to Store and Reheat
Store: Once cool, transfer leftover bites to an airtight container and store them in the fridge for up to 3 days.
To Freeze: Arrange the bites in a single layer on a baking sheet, and freeze until solid. Then, transfer them to a sealable bag and keep frozen for up to 2 months.
To Reheat: Warm frozen or thawed bites in the oven at 350°F just until heated through. Keep a close eye on them, and be careful not to let them burn!
