Description

This Cranberry Brie Bites recipe offers the perfect balance of sweet and savory flavors, wrapped up in a golden, flaky dough. Each bite features melty brie, tart cranberry sauce, and a hint of fresh rosemary for a festive appetizer that’s as easy to make as it is impressive to serve!


Ingredients

  • avocado oil or avocado oil spray
  • 1-2 tablespoons all-purpose flour
  • 8-oz tube crescent roll dough
  • 8-oz wheel of brie
  • 3/4 cup whole berry cranberry sauce (not jellied)
  • 1/2 cup chopped pecans
  • 2 tablespoons honey
  • 1 tablespoon chopped rosemary
  • pinch of sea salt

Instructions

  1. Preheat the oven to 375°. Grease a mini (24-cup) muffin tin with avocado oil or avocado oil spray. On a lightly floured surface, roll out the crescent dough and pinch together the seams. Use a sharp knife or pizza cutter to cut the dough into 24 squares. Place squares into the prepared muffin tin.
  2. Cut the brie into small bite-sized cubes and place each piece inside the dough cups. Top each piece of brie with a spoonful of cranberry sauce. 
  3. Add the chopped pecans, honey, pinch of sea salt, and chopped rosemary to a small bowl and stir until well combined. 
  4. Top each bite with a bit of the pecan mixture.
  5. Bake the brie bites for about 15 minutes or until the pastry is golden brown. Top the bites with flaky sea salt and more fresh rosemary before serving.

Notes

How to Store and Reheat 

Store: Once cool, transfer leftover bites to an airtight container and store them in the fridge for up to 3 days. 

To Freeze: Arrange the bites in a single layer on a baking sheet, and freeze until solid. Then, transfer them to a sealable bag and keep frozen for up to 2 months. 

To Reheat: Warm frozen or thawed bites in the oven at 350°F just until heated through. Keep a close eye on them, and be careful not to let them burn!
