Chicken Parmesan but Make it Pasta!

I think chicken parmesan might be one of my favorite Italian dishes of all time so I was super excited to try and recreate those flavors in a hearty baked pasta dish. Pretty sure I nailed it! Seriously, you’re going to LOVE this recipe. It’s full of tender chicken, veggies, marinara, and of course topped with a thick layer of melty mozzarella cheese. 

I think my favorite thing about this recipe thought is that once the pasta cooks, all the ingredients combine in a single pan. It’s hearty, a quick recipe to pull together, and only dirties one pan and one pot! Literally my favorite kind of recipe.

Ingredients 

Boneless Skinless Chicken Breast: youā€™ll need 1.5 pounds of chicken breast for this recipe. 

Seasonings: salt, black pepper, and Italian seasoning. 

Veggies: you’ll need yellow onion, a medium-sized carrot, garlic cloves, Calabrian chili peppers, and fresh spinach. 

Balsamic Vinegar: this adds a subtle sweetness to the pasta and helps to deglaze the pan. 

Marinara Sauce: weā€™re keeping things easy and using jarred marinara sauce in this recipe. 

Pasta: I use cooked cavatappi noodles, but you can substitute any pasta you like best. I recommend using short to medium-sized noodles for this recipe. 

Cheese: we’re topping the pasta with whole milk mozzarella cheese and freshly grated parmesan cheese for the perfect gooey, cheesy finish. 

Helpful Ingredient Substitutions 

Chicken Breast – you can swap chicken breast for boneless skinless chicken thighs or ground Italian chicken sausage if you prefer. 

Veggies – add in some extra veggies to this dish if you like! Diced bell pepper or mushrooms would be great. 

Pasta – if you need to keep this recipe gluten free, feel free to swap the pasta for your favorite gluten free version.

How to Make This Chicken Parmesan Pasta Recipe

Step One: Cook and season the chicken breast.

Step Two: Remove the chicken from the pan and then sautĆ© the veggies and garlic. 

Step Three: Add the marinara sauce, Calabrian chili peppers to the skillet, and the chicken back to the skillet. 

Step Four: Simmer the sauce and then stir in the chopped spinach and cooked pasta. 

Step Five: Top the chicken parmesan pasta with sliced mozzarella cheese and grated parmesan. Bake the dish for 10 to 15 minutes or until the cheese is melted and the sauce is bubbly.

Storage and Reheating Tips

Store any leftover chicken parmesan pasta in an airtight container in the fridge for up to 3-4 days. 

Reheat in the microwave, oven, or a covered pan on the stove. Add a splash of water or chicken broth as needed to add a bit of extra moisture if needed.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoons olive oil, plus more if needed
  • 1 small to medium yellow onion, finely diced
  • 1 small to medium carrot, finely diced
  • 4 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • 24oz marinara sauce
  • 1 tablespoon chopped Calabrian chili peppers
  • 5 oz baby spinach, chopped
  • 8 ounces cavatappi pasta, cooked
  • 8 oz whole milk mozzarella cheese, sliced
  • 1/4 cup freshly grated parmesan cheese,Ā plus more for serving
  • fresh basil, for serving

Instructions

  1. Preheat oven to 400 degrees.
  2. Add the diced chicken breast to a large mixing bowl and season with salt and black pepper. Toss until well combined.
  3. Heat a large oven safe braising pan with a lid to medium-high heat. Once hot add 1 1/2 tablespoons of olive oil and then add the diced chicken breast.
  4. Cook the chicken breast for 3-4 minutes on each side until browned. Once browned, remove the chicken from the pan and set aside.
  5. If needed, add a bit more oil to the pan and then add the onion and carrot. SautƩ for 6-8 minutes until the onion and carrot are tender. Next, add the minced garlic and sautƩ for another minute until fragrant. Add the balsamic vinegar to deglaze the pan and stir.
  6. Lower the heat to medium. Add the marinara sauce and the chopped Calabrian chili peppers to the braising dish. Stir until everything is well combined. Add the chicken back to the braising dish and stir until well combined. Bring the sauce to a simmer for 1-2 minutes.
  7. Lower the heat to low and then add the chopped spinach to the sauce and stir until wilted. Remove the pan from the heat and then stir in the cooked pasta.
  8. Top the pasta with the sliced mozzarella cheese and grated parmesan. Bake for 10-15 minutes until the cheese is fully melted and the dish is bubbly. Finish it under the broiler for 2-3 minutes to brown the cheese until golden.
  9. Finish with fresh basil and serve!
