Strawberries: if you have access to fresh ripe strawberries, I highly recommend using them for this recipe. However, you could also use frozen strawberries. Just be sure to thaw them before using.

Full Fat Coconut Cream: this recipe uses full fat, canned coconut milk to give the popsicles a creamy texture without the use of dairy. You can usually find coconut milk in the Asian grocery aisle of your local grocery store.

Lemon Juice: a little lemon juice brightens everything up and amplifies the flavor of the strawberries.

Maple Syrup: this adds a touch of sweetness to the popsicles. You could swap it for honey if you prefer.

How to Make Strawberries and Cream Popsicles

Step One: Add the strawberries, full fat coconut milk, lemon juice, and maple syrup to a high powered blender.

Step Two: Blend until completely smooth and creamy.

Step Three: Transfer the mixture to popsicle molds and freeze until solid.

Do I Have to Use Coconut Milk?

Full fat canned coconut milk will give these popsicles the best creamy texture, however, if you have a coconut allergy or cannot seem to find it, you are free to use another liquid. Oat milk or cashew milk would likely work very well in these popsicles and give you a similar result to coconut milk.

How to Easily Release the Popsicles from the Mold

If you are having a bit of trouble releasing the popsicles from their mold, try running them under warm water for a few seconds to make the popsicles easier to release and remove them from the mold.

How to Store Your Popsicles

The easiest way to store these popsicles is to keep them in their molds. However, you could also remove all of the popsicles from their molds and then transfer them to a freezer safe storage bag or container. When you are ready to eat, just grab a popsicle from the freezer and enjoy!

  • 113.5 oz can full fat coconut cream
  • 1/2 teaspoon lemon juice
  • 1/2 cup maple syrup

Instructions

  1. Add the strawberries, full fat coconut milk, lemon juice, and maple syrup to a high powered blender.
  2. Blend until completely smooth and creamy.
  3. Transfer the mixture to popsicle molds and freeze until solid.

  1. One of my kids is ANA to dairy, so I have been trying lots of dairy free popsicle recipes. This recipe though? Hands down the best. I only made half a recipe because I only had that many strawberries and half a can of coconut cream on hand, but I will be making more! The texture is so good-very similar to a storebought popsicle. They didn’t really taste like coconut, which was a bonus for us.
