If you have never tried making your own homemade popsicles then get excited because this recipe is for YOU! Making fruity and delicious homemade popsicles could not be easier and these creamy strawberry popsicles are the perfect place to start.

These creamy strawberry lime popsicles are made with fresh strawberries and tart lime juice. The addition of creamy coconut milk helps to give the popsicles just the right amount of creaminess and maple syrup sweetens things up a bit.

This recipe is obviously a great choice for the warmer spring and summer months but these popsicles are also a tasty treat that you can enjoy all year long.

Ingredients You’ll Need to Make This Strawberry Popsicle Recipe

Fresh Strawberries: if you have access to fresh ripe strawberries, I highly recommend using them for this recipe. However, you could also use frozen strawberries. Just be sure to thaw them completely before using.

Full Fat Coconut Milk: this recipe uses full fat, canned coconut milk to give the popsicles a creamy texture without the use of dairy. You can usually find coconut milk in the Asian grocery aisle of your local grocery store.

Maple Syrup: a touch of maple syrup is added for sweetness!

Lime Juice: the combination of sweet strawberries and tangy lime juice is absolutely delicious in these popsicles.

Lime Zest: to amplify the lime flavor and give the popsicles a bit of texture, this recipe uses fresh lime zest.

How to Make Frozen Strawberry Popsicles

Step One: First, start by making the creamy popsicle base. To do this, add the strawberries, full fat coconut milk, lime juice, and maple syrup to a high powered blender.

Step Two: Blend the ingredients until everything is completely smooth and creamy.

Step Three: Next, add the lime zest to the blender and use a spoon or spatula to stir until it is well mixed throughout the popsicle mixture.

Step Four: Now, transfer the blended popsicle mixture to popsicle molds. Freeze for 8 hours or overnight until the popsicles are completely frozen solid.

Step Five: When you’re ready to enjoy a popsicle, remove it from the mold and enjoy!

Do I Have to Use Coconut Milk?

Full fat canned coconut milk will give these popsicles the best creamy texture, however, if you have a coconut allergy or cannot seem to find it, you are free to use another liquid. Oat milk or cashew milk would likely work very well in these popsicles and give you a similar result to coconut milk.

Can I Substitute Another Fruit for the Strawberries?

Yes! One of the best things about these popsicles is that the fruit base is easily customizable to work with different fruits of your choosing. Any fruit that you think pairs well with the flavor of lime would be a great option for these popsicles.

Can I Double the Recipe?

How to Easily Release the Popsicles from the Mold

If you are having a bit of trouble releasing the popsicles from their mold, try running them under warm water for a few seconds to make the popsicles easier to release and remove them from the mold.

How to Store Your Popsicles

The easiest way to store these popsicles is to keep them in their molds. However, you could also remove all of the popsicles from their molds and then transfer them to a freezer safe storage bag or container. When you are ready to eat, just grab a popsicle from the freezer and enjoy!

Ingredients

  • 1 pound strawberries, hulled and cleaned
  • 1/2 cup full fat coconut milk
  • 1/4 cup lime juice
  • 1/2 cup maple syrup
  • zest of 2 limes

Method

  1. Add the strawberries, full fat coconut milk, lime juice, and maple syrup to a high powered blender.
  2. Blend until completely smooth and creamy.
  3. Next, add the lime zest and stir until well combined.
  4. Transfer the mixture to popsicle molds and freeze until solid.

    Simple and delicious. I was a little shy on fresh strawberries, so I added in some red raspberries and a few frozen strawberries to fill out the recipe. I am glad I did, because halving this recipe would have been a shame! My 11-year-old son did nost of the work and he found them very easy to make.

    I had my ratios off a bit and used more strawberries than the recipe called for. They were still yummy, but I wish I would have added a little more coconut milk to get them a little creamier. I look forward to making many more in the future!

    Oh my goodness, these popsicles are SO good! The temperatures have already been creeping up toward the 90’s where I live in Southern Maryland and I also have an almost 2 year old who is obsessed with ice cream. I really don’t love to eat dairy when it’s so hot out and I’ve also been trying to find a treat that’s a little bit healthier than ice cream for her to enjoy. I am also working full time and don’t have any childcare so the fact that these are so dang easy to make with minimal cleanup is even better.

    I bought an $8 popsicle mold on Amazon just for this recipe and I’m so pleased with how it turned out! It took less than 5 minutes to juice/zest the limes, cut the tops off the strawberries, pour the syrup and coconut milk, blend everything in my Vitamix, pour into the molds and stick into the freezer. We’ve enjoyed them nearly every night since first making the recipe and I’m looking forward to trying some slight modifications too – I have an insane amount of mint in my back yard so I think I’ll try adding that in with the lime zest next.   12. These were beyond words good! My whole family, including my toddler, loved them. At first I was concerned they would be overly coconutty when I tasted the leftover “batter” but once frozen I barely tasted it. A bee summer staple for us for sure!
