Anyone else find something they love and make it over and over again? That’s me with these cottage cheese egg bites. I tested this recipe a few months ago and they’ve become a go-to breakfast for me. They’re so easy to make (just throw everything into the blender) and they’re packed with protein which I love. I’ve made these so many times at this point and added herbs, veggies, and really made them my own. They come out great every single time. Seriously, I love these and I really hope you do, too!

Recipe Ingredients
Eggs: you’ll need 8 large eggs to make these egg bites.
Cottage Cheese: I prefer 2% cottage cheese for this recipe, but whole milk cottage cheese will also work.
Sharp Cheddar Cheese: sharp cheddar cheese has more flavor than mild, which is why I prefer to use it for this recipe. If you want to add even more flavor, you could use extra-sharp cheese. I like to grate my own cheese for this recipe but you could grab some pre-shredded cheese if you’re short on time.
Seasonings: we’re adding a bit more flavor with salt, black pepper, onion powder, and garlic powder.
Hot Sauce: this adds the perfect touch of flavor. Feel free to add as little or as much as you like depending on how you tolerate spice.
Fresh Chives: I like to finish the egg bites with fresh chives to add a little color and extra flavor.
Ingredient Substitutions
- Cheese – feel free to swap the sharp cheddar cheese for any type of cheese you like best. Pepper jack, Monterrey, and mozzarella are all really great options.
- Hot Sauce – swap the hot sauce for buffalo sauce if preferred. It’s delicious.
- Veggies – you can add extra veggies to these to make them even more hearty. I’ve added chopped kale and spinach to the blender for a really easy way to get in some extra veggies. You could also add a small amount of sautéed onions, peppers, or mushrooms to the base of each muffin cup. Just keep in mind that doing this may mean you end up with a few extra egg bites.
- Protein – make these egg bites even higher in protein by including your favorite breakfast protein like cooked breakfast sausage.

How to Make High Protein Egg Bites with Cottage Cheese
Step One: Preheat the oven to 350 degrees Fahrenheit. If you’re using a silicone muffin pan, lightly grease it with cooking spray. Or, line a regular muffin pan with cupcake liners.
Step Two: Next, add the eggs, cottage cheese, cheddar cheese, salt, pepper, onion powder, garlic powder, and hot sauce to a blender. Blend until smooth.
Step Three: Pour the egg mixture evenly into the prepared muffin cups. Sprinkle each cup with chives.
Step Four: Bake for 20 to 22 minutes or until the eggs are set. The bites will be tender, but they should not be runny! Let them cool before serving.
Tips and Tricks
- Spray or line the muffin tin – this helps to prevent the egg cups from sticking. I’ve used a silicone muffin tin and a regular muffin tin and both work well!
- Don’t overfill the muffin wells – You want to fill them 3/4 of the way full to ensure they don’t overflow.
- Make a double batch – this recipe makes 12 cups, but you can easily double the recipe for a larger batch!
How to Store and Reheat
Store: Store the cottage cheese egg bites in an airtight container in the fridge for 3-5 days.
Reheat: You can reheat these egg bites in the microwave or in the oven. If using the microwave, heat the bites for 30 seconds at a time until warmed through. Or, if using the oven, wrap the bits in foil, and reheat them at 350 degrees until warmed through.
