Soup Ingredients

Onion, Celery, Carrot, Garlic: To build a delicious base of flavor we’re using a classic combination of fresh onion, celery, carrot, and garlic.

Chicken or Turkey Broth: Both chicken and turkey broth will work well here so feel free to use whatever you have on hand. If you’re not using a homemade broth be sure to grab low-sodium store-bought broth so that you can better control the sodium content.

Bay Leaves and Fresh Herbs: To really add some good flavor we’re using dried bay leaves and fresh thyme.

Leftover Turkey: this soup is the perfect way to use up that leftover holiday turkey! You can shred or dice the meat and you’ll need around 3 cups.

Egg Noodles: these are my favorite for a traditional turkey noodle soup. They’re wide and tender and just perfect.

How to Make This Turkey Noodle Soup Recipe

Step One: Heat the avocado oil, butter, or ghee in a large pot or dutch oven. 

Step Two: Add the diced onion, garlic, carrots, and celery to the pot and saute for 2-3 minutes until fragrant. 

Step Three: Add the chicken or turkey broth, bay leaves, salt, pepper, thyme, and leftover turkey to the pot. Bring the soup to a boil and then reduce the heat to a simmer. Let the soup simmer for 10-15 minutes until the veggies are tender.

Step Four: Next add the egg noodles to the soup and continue to cook for 5-10 minutes until they are tender. Once the noodles are tender you may need to add more broth to the soup depending on the amount of broth the noodles soak up.

Step Five: Remove the soup from the heat and then remove the thyme sprigs and bay leaves from the soup. Stir in a bit of fresh parsley and season the soup to taste with additional salt and pepper before serving.

Recipe Variations

This leftover turkey soup recipe is absolutely perfect but as always feel free to make it your own! Here are a few of my favorite ways to switch up this soup:

  • Add your favorite veggies. Baby spinach, tuscan kale, green peas, or even mushrooms would all be wonderful additions to this soup! If you’re adding leafy green or peas, stir them in during the last few minutes of cooking.
  • Leave out the noodles or keep them gluten free. Feel free to leave the noodles out the soup altogether or use your favorite gluten free variety!
  • Make the soup creamier. You can a splash of cream or full fat coconut milk to the soup to make it on the creamier side.

Can You Freeze Turkey Noodle Soup?

This soup will last in the fridge for up to 3-5 days. However, you can also freeze it!

I love to freeze soup for a quick and healthy lunch or dinner when I need it most. To freeze the soup, first let it come to a complete cool. Then, transfer it to airtight containers or freezer safe storage bags. Freeze the soup for up to three months.

When you are ready to reheat and eat the soup, I recommend letting the soup thaw in the fridge first before reheating on the stovetop for the best results.

  • 1 tablespoon avocado oil, butter, or ghee
  • 1 yellow onion, diced
  • 6 cloves garlic, minced
  • 2 large carrots, peeled and thinly sliced
  • 2 celery stalks, diced
  • 8 cups low-sodium chicken or turkey broth, plus more if desired
  • 2 dried bay leaves
  • 1 1/2 teaspoons salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 2 sprigs fresh thyme
  • 3 cups chopped or shredded leftover cooked turkey
  • 8 oz wide egg noodles
  • fresh parsley, for garnish
