Hearty Sweet Potato Sloppy Joes
Anyone else love a good Sloppy Joe? We didn’t eat them a ton growing up but when we did, I do remember loving them!
These heart sloppy Joe stuffed sweet potatoes give you everything you love about a traditional sloppy Joe but with more nutrition and an extra veggie.
Tender sweet potatoes are stuffed with a delicious sloppy Joe mix that will only take you 20 minutes to make. You can prep sweet potatoes in advance to make things even easier!

Stuffed Sweet Potato Ingredients
Sloppy Joe Sauce: the sweet and tangy sloppy joe sauce is made from a combination of mustard, tomato to paste, brown sugar, vinegar, Worcestershire sauce, and a little crushed red pepper flakes.
Ground Beef: for the best results I recommend using lean ground beef so that there is no excess oil in the sloppy joe mixture.
Onion and Garlic: to help build a delicious base of flavor.
Green Bell Pepper: a little green bell pepper helps to add that classic sloppy joe flavor.
Sharp Cheddar Cheese: this is totally optional but if you like a little cheese on your sloppy joes then you can add a bit of shredded sharp cheddar to the top of each potato.
Ingredient Substitutions
Brown Sugar – you can easily swap the brown sugar in this recipe for coconut sugar if you prefer.
Ground Beef – don’t want to use ground beef? swap it for ground turkey instead!
Green Bell Pepper – any bell pepper will work here. Use what you’ve got!
How to Bake Sweet Potatoes
The easiest, and in my opinion, the best way to prepare sweet potatoes is my baking them in the oven. Depending on the size of the potato, it usually takes around forty-five minutes to an hour for the sweet potatoes to cook through. After an hour just give the potatoes a gentle squeeze and if they give, they should be done.

What Size Sweet Potatoes to Use
The best sized sweet potatoes to use for this recipe are medium to large potatoes. You want to choose a sweet potato that is large enough to stuff without breaking. However, because each potato is supposed to be a serving, you don’t want to select a potato that’s too large either.

How to Make Sloppy Joe Baked Sweet Potatoes
Step One: Preheat oven to 425 degrees. Thoroughly clean the sweet potatoes and remove any dirt or grit. Prick the sweet potatoes all over with a fork and place them on a sheet pan lined with parchment paper. Bake the sweet potatoes for 45-50 minutes until completely tender. You should easily be able to stick a skewer of toothpick into the thickest part. Once the potatoes are tender, remove them from the oven.
Step Two: Add all of the sauce ingredients to a mixing bowl and whisk together until well combined. Set aside.
Step Three: Heat a large skillet over medium-high heat. Once hot, add the avocado oil and then add the ground beef. Brown the ground beef until no longer pink, breaking it up as it cooks.
Step Four: Once the meat is brown add the diced onion, garlic, and bell pepper to the skillet along with a pinch of salt and black pepper. Continue to cook for 3-5 minutes until the onion is tender and translucent.
Step Five: Next, lower the heat to low and pour in the sloppy Joe sauce. Stir until well combined and let simmer on low for 10-12 minutes. The sauce should thicken a bit as a it simmers.
Step Six: When you are ready to serve, use a sharp knife to split the top of the potato open lengthwise. Give the potato ends a gentle squeeze inward to open it up a bit and use a fork to fluff the insides a bit. Top each potato with a generous spoonful of the sloppy joe mixture. Top with sliced green onion and, if using, shredded cheddar cheese.
How to Store and Reheat
If you have leftovers I recommend storing the ground beef mixture and the sweet potatoes separately until you are ready to reheat, assemble, and eat the potatoes.
When stored in an air-tight container in the fridge everything should last for 3-4 days.
You can reheat the ground beef mixture and sweet potatoes separately in the microwave, until heated through, and then assemble.
