Must Make Birthday Cake Protein Balls!!
If you know me, you know I’m a huge fan of protein balls. I’ve got a few different recipes on All the Healthy Things (the cookie dough protein balls and lemon blueberry protein balls are two faves) and I love keeping a batch in the freezer. They’re perfect to prep ahead of time and just grab and go as I head out the door!
Lately, I’ve been making these cake batter protein balls on repeat. They’re full of sweet vanilla flavor and have a few colorful sprinkles in every bite, making for a fun treat. Perfect for both kids and adults, these bites are the perfect way to satisfy your sweet tooth while leaving you feeling great.

A Few of My Notes About the Key Ingredients

- Protein Powder: there are so many protein powders out there! Use whatever you like best. I prefer this unflavored protein powder for this recipe, but vanilla protein powder or cake batter protein powder also works well.
- Blanched Almond Flour: finer than regular almond flour, this acts as a binder, creating a smooth dough and helping the balls hold their shape. If you can’t find or use blanched almond flour, substitute oat flour instead.
- Cashew Butter: I like to use a creamy store-bought cashew butter with just one or two ingredients or my homemade cashew butter. You can swap the cashew butter for creamy peanut butter or almond butter if you prefer!
- Maple Syrup: this adds a touch of sweetness and a subtle maple taste. Use honey instead if that’s what you prefer.
- Flavor Extracts: vanilla extract and almond extract add a subtle, nutty vanilla taste, recreating the iconic flavor of yellow cake batter.



Ashlea’s Tips and Tricks
- Be sure to use an all-natural, smooth, creamy, and drippy cashew butter for the best results. Something like a Jif or Skippy won’t work as well in this recipe. The dough will be too dry, and the balls may come out crumbly.
- If you happened to add just a bit too much of the dry ingredients, and the dough seems a bit too dry, try adding a tablespoon of extra cashew butter! Or, if the dough is too wet, add extra almond flour until it holds its shape.
- Let the dough chill a bit before scooping and rolling. I find this makes it much easier to form the “dough” into balls.
- Use a 2 tablespoon-sized cookie scoop to portion and roll the dough. Trust me. It’s the easiest way.

How to Store and Freeze
Fridge: Store these birthday cake protein balls in an airtight container in the fridge for up to one week to keep them fresh.
Freezer: My preferred method of storing these bites is in the freezer. They freeze incredibly well in a freezer-safe storage container or bag and stay fresh for up to three months.
To freeze the bites, place them on a sheet pan lined with parchment paper and then place the sheet pan in the freezer for thirty minutes to harden a bit. Next, transfer the balls to a freezer-safe storage bag or container. When you are ready to eat, grab a bite, and let it thaw at room temperature for just a few minutes before digging in.

Ingredients
- 1/2 cup unflavored protein powder
- 1/2 cup blanched almond flour
- 1/4 teaspoon salt
- 1 cup creamy cashew butter
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup sprinkles, plus more the topping
Instructions
- In a mixing bowl, whisk together the protein powder, almond flour, and salt until well combined.
- Next, add the cashew butter, maple syrup, and vanilla extract to the mixing bowl and stir until well combined and a dough forms.
- Fold the sprinkles in until evenly distributed.
- Let the cookie dough chill in the fridge for 15 minutes and the use a 2 tablespoon size cookie dough scoop to scoop them into cookie dough balls. You should have around 20 cookie dough balls.
- Top each ball with additional sprinkles and enjoy!
