The BEST Baked Gnocchi Recipe 

I’m a big fan of one skillet recipes and a big fan of pasta so this One Skillet Baked Gnocchi is like my dream meal, haha! This recipe is something special. It’s packed with veggies and protein while also managing to be perfectly cozy and comforting. The tender gnocchi bakes in a flavor loaded marinara sauce and everything is topped with just the right amount of melty mozzarella cheese.

It’s not often that I think of a one skillet recipe as also being the perfect date night recipe but this, my friends, is in fact both. It’s one of those meals that’s easy enough to throw together for a quick weeknight dinner but sophisticated enough to make for someone special and I love that.

Recipe Ingredients

Italian Ground Chicken Sausage: I love using Italian sausage to add a bit of extra flavor but I include some substitutions below if needed.

Veggies: we’re using yellow onion, carrot, celery, garlic, and baby spinach.

Marinara Sauce: I like to keep things easy and use jarred marinara sauce in this recipe, but you could use a homemade version if you’d like. 

Potato Gnocchi: these little tender Italian dumplings are usually made from a combination of potatoes and semolina or flour. You can find them in the pasta aisle of your local grocery store. 

Cheese: whole milk mozzarella cheese adds the final touch of melty goodness.

Helpful Substitutions and Additions

  1. Chicken Sausage – feel free to swap the chicken sausage for Italian turkey or pork sausage if you prefer. You could also substitute regular ground beef, ground turkey, or ground chicken. if you’re not a fan of spice.
  2. Gnocchi – If you need to make this recipe gluten-free, just swap the regular gnocchi for a gluten-free variety. Cauliflower gnocchi will likely work in this recipe as well. 
  3. Veggies – try adding in chopped mushrooms if you enjoy them, or swapping the baby spinach for chopped kale!
  4. Cheese – need to keep this baked gnocchi recipe dairy-free? Use your favorite plant-based cheese in place of the mozzarella.

How to Make This Easy Gnocchi Bake Recipe

Step One: Preheat the oven to 400 degrees Fahrenheit.

Step Two: Heat a large oven-proof skillet over medium-high heat. Once hot, add the olive oil. Then, add the chicken sausage. 

Step Three: Cook the sausage until it’s browned and slightly crisped, breaking it up as it cooks. Once browned, add the diced onion, carrot, and celery, and continue to cook for 4 to 5 minutes or until the veggies start to become tender. 

Step Four: Next, add the minced garlic, and sauté for 1 to 2 more minutes. 

Step Five: Reduce the heat to medium, and add the marinara sauce, stirring well to combine. 

Step Six: Next, add the spinach, gnocchi, and chopped basil, and stir again until well combined. 

Step Seven: Top the gnocchi bake with sliced mozzarella, and transfer the skillet to the oven. Bake for 20 minutes or until the cheese is melted and the dish is bubbly. Finish by broiling the skillet for 1 to 2 minutes or until the cheese is lightly browned and golden. Be careful not to let it burn! 

Step Eight: Remove the skillet from the oven, and top the dish with more chopped fresh basil before serving. Enjoy!

How to Store and Reheat

Store any leftover gnocchi bake in an airtight container in the fridge for up to 3-4 days. 

Reheat in the microwave or in a covered pan on the stove over low heat. Add a splash of water or chicken broth to add a bit of extra moisture if needed.

  • 1 pound Italian ground chicken sausage, removed from casing
  • 1 small yellow onion, diced
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 4 cloves garlic, finely minced
  • 24oz marinara sauce
  • 5 oz baby spinach, chopped
  • 1 pound potato gnocchi
  • 1/4 cup chopped basil, plus more for serving
  • 8 oz whole milk mozzarella cheese, sliced
  • fresh parsley, for serving

Instructions

  1. Preheat oven to 400 degrees.

  6. Next, add the spinach, gnocchi, and chopped basil, and stir until combined.
  7. Top the gnocchi evenly with sliced mozzarella and then transfer the skillet to the oven. Bake the gnocchi for 20 minutes until the cheese is melted and the dish is bubbly. Finish by broiling the skillet for 1-2 minutes until the cheese is lightly browned and golden, watching careful to make sure it doesn’t burn.
  8. Remove the skillet from the oven and top with more chopped fresh basil and parsley before serving. Enjoy!
