Healthy Blueberry Baked Oatmeal

It took me a little while to hop on the baked oatmeal train but I am officially onboard with all things baked oatmeal goodness.

One of the things y’all constantly ask for are easy breakfast ideas and this blueberry baked oatmeal is exactly that. It can be prepped and made in advance, reheats beautifully, and provides a delicious filling breakfast option that will keep you feeling fueled and nourished.

All you need to make this recipe are a few simple ingredients that you likely already have on hand. This oatmeal is also really easy to customize so feel free to make it work for you. Keep reading to learn everything you need to know about making this blueberry baked oatmeal!

The Ingredients You’ll Need to Make This Recipe

Almond milk: I always have almond milk on hand in my fridge and it is a great liquid of choice for this recipe. You could also use cashew milk, oat milk, or a dairy-milk if you prefer. If you like the flavor of coconut milk, full-fat canned coconut milk could also be delicious.

Maple syrup: This gives the oatmeal just a touch of sweetness. You can use honey if your prefer.

Melted butter: A little butter adds some delicious richness to this baked oatmeal. If you would like to keep this recipe dairy free, feel free to use coconut oil instead.

Vanilla extract: In my opinion, you cannot have good oatmeal without a touch of vanilla extract. This really rounds out the flavor of the oatmeal and makes everything taste extra delicious.

Gluten free rolled oats: Oats are naturally gluten free, but if you have a gluten allergy you will want to look for certified gluten free oats.

Cinnamon: There is a good amount of ground cinnamon in this recipe and that is on purpose. Not only do cinnamon and oats go well together, the flavor of cinnamon and blueberries also pairs nicely. The cinnamon adds a delicious warm flavor to the oatmeal that I am sure you will love.

Fresh blueberries: There are few things better than fresh blueberries and this recipe makes them the star of the show. Be sure to thoroughly rinse and drain your blueberries before using.

Can I Use Frozen Blueberries?

Yes! Don’t have fresh blueberries and need to use frozen? You can absolutely do that! For the best results, I recommend letting the blueberries thaw completely and draining off any excess water before adding them to the batter.

How to Make Blueberry Baked Oatmeal

Step One: First start by preheating your oven to 350 degrees.

Step Two: Next, add the eggs, almond milk, maple syrup, melted butter, and vanilla extract to a large mixing bowl. Whisk all of the wet ingredients together until well combined.

Step Three: Now, you’ll add the gluten free oats, baking powder, ground cinnamon, and salt to the mixing bowl and stir until well combined.

Step Four: Lastly, fold the fresh blueberries into the oat batter.

Step Five: Transfer the blueberry oatmeal batter to a greased  baking dish. Bake at 350 degrees for 25-30 minutes until the oatmeal is just almost set.

How to Serve

This baked oatmeal is perfectly good on its own but you can also add a drizzle of maple syrup for even more deliciousness. You can also top a slice with a dollop of plain or vanilla Greek yogurt, more fresh fruit, sliced nuts, and nut butter.

Baked Oatmeal Variations and Additions

  • Keep it dairy-free: if you need to keep this recipe completely daiy-free, feel free to use melted coconut oil or melted vegan butter instead of traditional butter.
  • Add your favorite nuts and seeds: baked oatmeal is incredibly easy to customize. Add in a few handfuls of chopped pecans, walnuts, or sliced almonds for a little crunch.
  • Use extra spices: if you want to increase the spices in this recipe go for it! A little ground ginger would be lovely or, if you love cinnamon, extra cinnamon would be great. I think a little nutmeg in this recipe would also taste great.
  • Add extra fruit: if you want to add more fruit to your baked oatmeal try adding handful of fresh raspberries, sliced banana, or even flaked coconut. 

How to Store

Store the baked oatmeal in an air-tight container in the fridge for 4-5 days.

Can You Make Blueberry Baked Oatmeal Ahead of Time?

If you would like to prep this baked oatmeal in advance, you have a couple of easy options.

Option One: Because the oats will soak up all of the liquid in the batter, I do not recommend prepping the batter in advance and baking the next morning. Instead, I find it more helpful to prep all of the dry ingredients and all of the wet ingredients separately the night before.

To do this, add all of the dry ingredients to a mixing bowl, cover, and let sit on the counter. Next, whisk together all of the wet ingredients, leaving out the blueberries. Cover the mixture and place in the fridge.

The next day, when you are ready to make your baked oatmeal, just combine the wet and the dry ingredients, fold in the blueberries, and then transfer to a baking dish.

Option Two: The second option is my personal favorite which is to bake the oatmeal the night before and then reheat in the morning. You can reheat a slice of the oatmeal in the microwave for thirty seconds at a time.

Can You Freeze This Baked Oatmeal?

Yes! To freeze the oatmeal, let it come to a complete cool and then transfer to a freezer safe storage container. You can reheat the oatmeal in the oven at 350 degrees wrapped in foil until warmed through or in the microwave.

  • 1 3/4 cups almond milk
  • 1/2 cup maple syrup
  • 1/4 cup melted butter
  • 2 teaspoons vanilla extract
  • 2 1/2 cups gluten free rolled oats
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries

Instructions

  1. Preheat oven to 350 degrees.

  1. Another recipe win from Ashlea! On this Arctic January morning, I wanted something warm & filling, and this was perfect. As I was eating it, I realized I forgot the maple syrup accidentally, and it still tastes delicious. A drizzle of maple syrup on top would work for those who want the extra sweetness. I also love it with a dollop of Greek yogurt. The best part is that I have a delicious breakfast ready for this busy week.

  4. I love this recipe and have made it many times with several types of fruit – peaches, pineapple/coconut, mixed berries. It’s great for meal prep. The only thing I do slightly differently on occasion is take a half cup of the fruit and blend it with my milk to spread out some extra fruit flavor!
