This easy chicken and veggie tikka masala recipe combines a few simple ingredients with Maya Kaimal tikka masala sauce for a hearty and delicious dinner that comes together in just 30 minutes. Here’s what you need to make this delicious dish:
boneless skinless chicken thighs
carrots, celery, and onions
creamy coconut milk

If you’ve never had tikka masala, it’s a warming and delicious blend of tomato, garam masala, and spices like cinnamon and clove. Maya Kaimal’s shelf-stable Tikka Masala simmer sauce is completely gluten-free and vegetarian which makes it a perfect crowd pleasing option and incredibly versatile. If you need to make this a vegetarian dish, you can sub the chicken for chickpeas.
In this recipe, I combine the simmer sauce with chicken, fresh veggies, and a few seasonings to make a hearty meal. To make the sauce stretch a little farther, I add creamy canned coconut milk to create a delicious stew like dish that’s perfect over white rice or even cauliflower rice.

Slow Cooker Beef Enchilada Stuffed Sweet Potatoes [gluten-free, paleo]
Hawaiian Chicken Wings [Whole30, paleo, gluten-free]
Classic Creamy Tomato Soup [Whole30, dairy-free, paleo]
1.5 lbs boneless skinless chicken thighs, diced
1 tbsp avocado or coconut oil
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp red pepper flakes
1 cup carrots, sliced into rounds
1 cup celery, chopped
1/4 cup yellow onion, diced
1 clove of garlic, minced
1 cup canned coconut milk
1 cup chopped fresh spinach
white rice or cauliflower, for serving
cilantro, for serving
lime juice, for serving
Heat a large pot over medium heat. While the pot is heating, season the chicken with salt, garlic powder, onion powder, and red pepper flakes.
When the pot is hot, add in the oil and then add the seasoned chicken. Cook the chicken until browned and then add the carrots, celery, onion, garlic, and bay leaves.
Cook the veggies until they become fragrant. Next, add the Maya Kaimal Tikka Masala Simmer Sauce and coconut milk, and stir until well combined. Lower the heat, cover, and let simmer for 30 minutes.
When the chicken and veggie tikka masala has finished simmering, add in the chopped spinach and stir. When the spinach has wilted, serve the tikka masala over rice and garnish with fresh cilantro and lime juice. Enjoy!

I tried this brand of simmer sauce for the first time today. Reading through the ingredients, I noticed carrageenan, which is a known carcinogen. I won’t be purchasing this product again. Is there another brand you’ve tried that you could recommend?
Kate – I try to avoid cancer-causing foods as well. But it seems you may be confusing Food-grade carrageenan with degraded carrageenan (also called poligeenan). The later causes cancer, but the food-grade carrageenan is known (so far) to mostly just cause inflammation. So, unless the research findings change, I wouldn’t worry.
