Maya Kaimal’s shelf-stable Tikka Masala simmer sauce is completely gluten-free and vegetarian which makes it a perfect crowd pleasing option and incredibly versatile. If you need to make this a vegetarian dish, you can sub the chicken for chickpeas.
In this recipe, I combine the simmer sauce with chicken, fresh veggies, and a few seasonings to make a hearty meal. To make the sauce stretch a little farther, I add creamy canned coconut milk to create a delicious stew like dish that’s perfect over white rice or even cauliflower rice.

Chicken and Veggie Tikka Masala
Ingredients:

1.5 lbs boneless skinless chicken thighs, diced

1 tbsp avocado or coconut oil

1 tsp salt
-
1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp red pepper flakes

1 cup carrots, sliced into rounds

1 cup celery, chopped

1/4 cup yellow onion, diced

1 clove of garlic, minced

1 cup canned coconut milk

1 cup chopped fresh spinach

white rice or cauliflower, for serving

lime juice, for serving
Instructions:

Heat a large pot over medium heat. While the pot is heating, season the chicken with salt, garlic powder, onion powder, and red pepper flakes.

When the pot is hot, add in the oil and then add the seasoned chicken. Cook the chicken until browned and then add the carrots, celery, onion, garlic, and bay leaves.

Cook the veggies until they become fragrant. Next, add the Maya Kaimal Tikka Masala Simmer Sauce and coconut milk, and stir until well combined. Lower the heat, cover, and let simmer for 30 minutes.
