You may not automatically think of fruits when you hear salad, but trust me, if you haven’t tried adding fresh or dried fruits to your salads yet, you are really missing out. Fruit adds just a touch of natural sweetness to any salad and pairs perfectly with creamy salty cheeses, nuts, or avocados.

What I love about this salad is that you can make a few chicken breasts at the start of the week and then assemble the salads as needed. This is a great option if you need a quick lunch or dinner option during those busy summer weeks. You could also take this salad outside and grill your chicken instead of cooking it on the stovetop. It would be just as easy and delicious!
The honey lime vinaigrette for this salad keeps well in the fridge so you can make a batch at the same time you make the chicken breasts. Storing your dressings in a mason jar with a tightly sealed lid is a great way to keep them fresh. Because the oil naturally separates in the fridge, when you’re ready to use the dressing just give your mason jar a shake before adding to your salad and you’re good to go!
For the Salad:
2 boneless skinless chicken breast (one for each salad)
1/2 tbsp avocado oil
For the Honey-Lime Vinaigrette:
1/2 cup olive or avocado oil
1/4 cup lime juice
2 tbsp minced shallot
2 tbsp honey
1 clove garlic
1 tsp salt
fresh cracked black pepper
Heat a skillet over medium-high heat. While the skillet is heating, season the chicken breast with a few shakes of garlic powder, salt, pepper, paprika, and chili powder. When the skillet is hot, add in 1/2 tbsp of avocado oil and then add the chicken breast. Cook the chicken for 4-6 minutes on each side until cooked through. Let the chicken rest while you assemble the salad and dressing.
To make the vinaigrette, add all of the ingredients to a high-powered blender and blend until smooth.
Assemble the salads with greens, berries, cheese, almonds, avocado, and sliced chicken breast. Drizzle the vinaigrette on top and enjoy!
