I love a good birthday cake recipe and with colorful sprinkles, hints of vanilla and almond extract, and a rich, luscious texture, these high protein overnight oats capture all the nostalgic flavor of classic birthday cake in a balanced, make-ahead breakfast.

These overnight oats are the perfect little breakfast treat when you want something special or just want to switch up from your normal overnight oats recipe!

Each serving is packed with protein, fiber, and healthy fats to help keep you satisfied for hours, making them perfect for busy mornings, meal prep, or anytime you want breakfast to feel a little more fun. Who says you can only have birthday cake once a year? You’ll crave these oats every day!

A few simple ingredients all come together to make these overnight oats. Vanilla and almond extract really help to give them the perfect birthday cake flavor.
  • Greek Yogurt: this makes the oats nice and creamy and adds protein. I use unsweetened plain Greek yogurt. However, if you like things on the sweeter side, feel free to use a sweetened Greek yogurt instead. Full-fat yogurt will create the richest flavor and creamiest consistency, but any percentage works. 
  • Milk: unsweetened almond milk or oat milk are my go-to for this recipe, but use whatever milk you have on hand. 
  • Flavor Extracts: vanilla extract and almond extract enhance the sweetness of the oats and infuse them with flavor, giving them lots of depth. 
  • Maple Syrup: this adds a touch of sweetness and a subtle molasses taste. Feel free to substitute honey if that’s what you prefer. 
  • Cashew Butter: this contributes to the creamy texture and adds a boost of healthy fats. Use homemade cashew butter or a natural cashew butter without any added sweeteners or oils if you can find it! 
  • Oats: for the best results, I recommend using whole grain, old-fashioned rolled oats and not quick oats or steel-cut oats.
  • Protein Powder: this plain protein powder is my favorite because it doesn’t change the flavor and doesn’t have a chalky texture, but vanilla or cake-batter-flavored protein powder also works well. Use whatever you like best! 
  • Chia Seeds: these help thicken the oats and add healthy fats and fiber. 
  • Salt: just a pinch enhances the rest of the ingredients and balances the sweetness.
  • Sprinkles: these create a festive birthday cake touch. Use any sprinkles you like best!

Ingredients

  • 1/2 cup Greek yogurt
  • 1 1/4 cups unsweetened almond or oat milk, plus more as needed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1–2 tablespoons maple syrup
  • 1 tablespoon cashew butter
  • 1 cup gluten free oats
  • 1 scoop plain or vanilla protein powder
  • 1 tablespoon chia seeds
  • 1/4 teaspoon salt
  • 2 tablespoons sprinkles

Toppings

  • sprinkles
  • whipped cream or greek yogurt

Instructions

  1. Add the Greek yogurt, milk, vanilla extract, almond extract, maple syrup, and cashew butter to a mixing bowl. Whisk together until well combined.
  2. Next, fold in the oats, protein powder, chia seeds, salt, and sprinkles and mix until well combined.
  3. Separate the oats into two separate cups or jars with lids and let the oats chill overnight.
  4. After the oats have chilled, remove them from the fridge and give them a stir. Feel free to add an extra splash of milk if you want to thin the oats out a bit. Top with a little whipped or greek yogurt and sprinkles

Notes

Overnight oats are typically served cold, straight from the fridge. However, you can warm them in the microwave if you prefer your oats warm. 

This recipe will stay fresh in an airtight container in the fridge for 3 to 5 days. Just keep in mind that the texture of the oats may change as they soak up more liquid. They’ll still taste great, but I prefer to enjoy a batch for two or three days and then make another instead of doubling the recipe and eating off of it all week long. This just prevents the oats from becoming super mushy.
