Description

This is the best Easy Egg Salad Recipe! It’s made with a combination of Greek yogurt and mayonnaise, plenty of fresh herbs, and capers for even more flavor. If you like egg salad then you’re going to LOVE this recipe!


Ingredients

  • 2 tablespoons whole milk greek yogurt
  • 2 tablespoons mayonnaise
  • 1/2 tablespoon dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon lemon zest
  • 1/4 teaspoon kosher salt, plus more to taste
  • fresh cracked black pepper
  • 6 large hard boiled eggs, peeled and chopped
  • 1/2 teaspoon – 1 teaspoon capers
  • 1/4 cup finely diced red onion
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons sliced fresh chives, plus more for serving

Instructions

  1. Add the greek yogurt, mayonnaise, dijon mustard, lemon juice and zest, salt and pepper to a mixing bowl. Whisk together until well combined.
  2. Next add the eggs, capers, red onion, and herbs. Gently stir until well combined.
  3. Serve the egg salad as is or in a sandwich with fresh green leaf lettuce.
