Description

These Strawberry Cheesecake Overnight Oats taste just like a slice of strawberry cheesecake. They’re made with a few simple ingredients and perfect to make ahead for grab-and-go breakfasts, snacks, or desserts. 


Ingredients

  • 1 cup gluten free oats
  • 1 tablespoon chia seeds
  • 1/2 cup Greek Yogurt
  • 2 tablespoons cream cheese, softened
  • 1 cup almond milk
  • 1 teaspoon lemon juice
  • 12 tablespoons maple syrup
  • 1/2 cup chopped strawberries, plus more for topping
  • crushed graham cracker, for topping

Instructions

  1. Add the oats and chia seed to a mixing bowl and stir until well combined.
  2. Add the Greek Yogurt, cream cheese, almond milk, lemon juice, and maple syrup to a high powered blender. Blend until smooth and creamy.
  3. Pour the liquid mixture over the oats and chia seeds. Stir until well combined. Lastly fold in the strawberries.
  4. Transfer the oats to large wide mouthed glass container with lid (like a weck jar/mason jar).
  5. Cover the container and place in the fridge for at least 2 hours or up to overnight.
  6. After the oats have chilled, remove them from the fridge and give them a stir.
  7. Separate the oats into two different jars. Feel free to add an extra splash of milk if you want to thin the oats out a bit. Top the oats with chopped strawberries and crushed graham crackers. Enjoy!
