These Strawberry Cheesecake Overnight Oats taste just like a slice of strawberry cheesecake. They’re made with a few simple ingredients and perfect to make ahead for grab-and-go breakfasts, snacks, or desserts.

- 1 cup gluten free oats
- 1 tablespoon chia seeds
- 1/2 cup Greek Yogurt
- 2 tablespoons cream cheese, softened
- 1 cup almond milk
- 1 teaspoon lemon juice
- 1–2 tablespoons maple syrup
- 1/2 cup chopped strawberries, plus more for topping
- crushed graham cracker, for topping
Instructions
- Add the oats and chia seed to a mixing bowl and stir until well combined.
- Add the Greek Yogurt, cream cheese, almond milk, lemon juice, and maple syrup to a high powered blender. Blend until smooth and creamy.
- Pour the liquid mixture over the oats and chia seeds. Stir until well combined. Lastly fold in the strawberries.
- Transfer the oats to large wide mouthed glass container with lid (like a weck jar/mason jar).
- Cover the container and place in the fridge for at least 2 hours or up to overnight.
- After the oats have chilled, remove them from the fridge and give them a stir.
- Separate the oats into two different jars. Feel free to add an extra splash of milk if you want to thin the oats out a bit. Top the oats with chopped strawberries and crushed graham crackers. Enjoy!
