Description

This quick and easy strawberry baked oatmeal recipe is full of fresh strawberries, crunchy nuts, and whole grain oats to start the day!


Ingredients

  • 2 eggs
  • 2 cups almond milk
  • 1/2 cup dark brown sugar
  • 1/4 cup melted butter
  • 2 teaspoons vanilla extract
  • zest and juice of 1 lemon
  • 2 1/2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup sliced almonds, plus more for the top
  • 2 cups chopped strawberries, plus more for the top


Instructions

  1. Preheat oven to 350 degrees and grease an 9 inch deep pie dish.
  2. To a large mixing bowl, add the eggs, almond milk, brown sugar, melted butter, and vanilla extract, and lemon zest. Whisk all of the wet ingredients together until well combined.
  3. Next, add the gluten free oats, baking powder, ground cinnamon, and salt to the mixing bowl and stir until well combined.
  4. Lastly fold the almonds and fresh strawberries into the oat batter.
  5. Transfer the strawberry oatmeal batter to the greased baking dish and top with a few more sliced strawberries.
  6. Bake at 350 degrees for 30-40 minutes until the oatmeal is just almost set.
