This quick and easy strawberry baked oatmeal recipe is full of fresh strawberries, crunchy nuts, and whole grain oats to start the day!

- 2 eggs
- 2 cups almond milk
- 1/2 cup dark brown sugar
- 1/4 cup melted butter
- 2 teaspoons vanilla extract
- zest and juice of 1 lemon
- 2 1/2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup sliced almonds, plus more for the top
- 2 cups chopped strawberries, plus more for the top
Instructions
- Preheat oven to 350 degrees and grease an 9 inch deep pie dish.
- To a large mixing bowl, add the eggs, almond milk, brown sugar, melted butter, and vanilla extract, and lemon zest. Whisk all of the wet ingredients together until well combined.
- Next, add the gluten free oats, baking powder, ground cinnamon, and salt to the mixing bowl and stir until well combined.
- Lastly fold the almonds and fresh strawberries into the oat batter.
- Transfer the strawberry oatmeal batter to the greased baking dish and top with a few more sliced strawberries.
- Bake at 350 degrees for 30-40 minutes until the oatmeal is just almost set.
