Ingredients

  • 2 pounds boneless, skinless chicken breast
  • 116oz jar red salsa
  • 1/4 cup lime juice
  • 1 teaspoon dried cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika

For Serving

  • corn tortillas, for serving
  • avocado, for serving
  • cilantro, for serving
  • diced tomato, for serving
  • diced red onion, for serving
  • Cotija, for serving
  • Greek yogurt or sour cream, for serving

Method

  1. Add the chicken, spices, salsa, and lime juice to the base of a slow cooker.
  2. Cook the chicken on high for 2-3 hours or on low for 4-5hours until the chicken is tender and easy to shred.
  3. Remove the chicken breast from the slow cooker and use two forks to shred the meat. Return the meat to the slow cooker and stir to combine. Cover and keep on warm until you are ready to eat.
  4. Assemble the tacos with the shredded chicken (drain a bit of the liquid before adding to the shell) and then your favorite toppings! Enjoy!
