Ingredients

  • 2 cups diced chicken breast
  • 1/3 cup basil pesto
  • 1/4 cup mayonnaise
  • 1/4 cup toasted pine nuts, plus more for garnish
  • 2 tablespoons diced red onion
  • 1 tablespoon lemon juice
  • salt + pepper to taste

For Serving

  • fresh basil, chopped for garnish
  • mixed greens, for serving
  • rainbow cherry tomatoes, halved for serving

Method

  1. Add all of the ingredients to a large bowl and mix until well combined. Add more salt, pepper, or lemon juice to taste.
  2. Serve over mixed greens, with cherry tomatoes, fresh basil, and pine nuts.
