Monster cookie energy bites packed with gluten free oats, shredded coconut, honey, pumpkin seeds, and all natural creamy peanut butter. These energy bites are perfect for a quick snack or an after dinner treat. They are gluten free, vegan, and so easy to make!

- 1 cup creamy peanut butter
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 1/4 cups old-fashioned rolled oats
- 3 tablespoons chia seeds
- 1/4 cup shredded unsweetened coconut
- ¼ cup pumpkin seeds
- 1/2 cup chocolate candies
- ¼ cup mini chocolate chips
- 1/4 teaspoon sea salt
- flaky sea salt for topping
Instructions
- Add the peanut butter, honey, oats, pumpkin seeds, shredded coconut, sea salt, chia seeds, dark chocolate chips, and chocolate candies to a large mixing bowl.
- Stir the ingredients together until well combined and a sticky “dough” has formed.
- Place the dough into the fridge to chill for 15-20 minutes.
- Use a cookie dough scoop to scoop the energy bite dough. Use your hands to roll each scoop of dough into a ball and then place on a cookie sheet lined with parchment paper. Sprinkle a little flaky sea salt on top of the bites and enjoy!
