Ingredients

Scale
  • 1.5 pounds ground turkey
  • 1 tablespoon chopped fresh dill
  • 1/4 cup crumbled feta
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup finely diced red onion
  • 1/4 cup roasted red peppers, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 tsp black pepper
  • 1 tablespoon olive oil

Creamy Tzatziki Sauce

  • 3/4 whole milk Greek yogurt
  • 1/4 cup grated seedless/English cucumber, gently squeezed in a kitchen cloth to remove water
  • 1 clove fresh garlic, finely minced or pressed
  • 2 tablespoons chopped dill
  • 1/2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • salt and pepper (to taste)

Toppings

  • tzatziki sauce
  • thinly sliced red onion
  • red tomato
  • thinly sliced English cucumber
  • green leaf lettuce
  • whole grain brioche buns

Instructions

  1. Add the ground turkey, dill, feta, spinach, red onion, roasted red peppers, spices, garlic, salt and pepper to a large mixing bowl.
  2. Use your fingers to gently mix everything together until well combined. Divide the ground turkey mixture into five patties.
  3. Make the Tzatziki Sauce: add the greek yogurt, cucumber, garlic, dill, lemon juice, and olive oil to a small bowl. Stir until well combined.
  4. Heat a large skillet over medium heat. Once hot, add 1 tablespoon of oil and then add the patties. Cook for 5-6 minutes and then flip the burgers and cook for another 5-6 minutes until the internal temperature reaches 165 degrees Fahrenheit. While the burgers are cooking toast your buns.
  5. Remove the patties from the pan and assemble your burgers on toasted brioche buns with all your favorite toppings and the tzatziki sauce.
