Description

These Gluten-Free Monster Cookie Bars are packed with peanut butter, gluten-free rolled oats, chocolate-coated candies, and plenty of chocolate chips. They’re easy to make, come together without a lot of fuss, and no one will be able to tell that they’re gluten free!


Ingredients

  • 1/2 cup creamy unsweetened and all-natural peanut butter (I used Crazy Richards)
  • 1/2 cup unsalted butter, melted
  • 1 cup dark brown sugar
  • 1 large egg and 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 3/4 cup gluten free all purpose flour (I used Cup4Cup)
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup chocolate coated candies, plus more for the top
  • 1/2 cup dark chocolate chips, plus more for the top
  • flaky sea salt, for topping

Instructions

  1. Preheat oven to 350 degrees and line an 8×8 baking pan with parchment paper.
  2. Add the peanut butter, melted butter, and dark brown sugar to a large mixing bowl. Whisk together until well combined and smooth.
  3. Next, add the eggs and vanilla extract and whisk until well combined.
  4. Sift the gluten free flour, baking soda, cinnamon, and salt into the wet ingredients and then fold in until well combined.
  5. Next, add the oats, chocolate coated candies, and dark chocolate chips into the dough until well combined.
  6. Transfer the dough to the lined baking pan and use your fingertips or a rubber spatula to press it into an even layer. Top the dough with extra chocolate candies and chocolate chips.
  7. Bake the bars for 25 minutes at 350 degrees. Remove from the oven, top with flaky salt, and let the bars cool completely before removing from the pan and slicing into 16 bars.
