Description

Cookie Dough Energy Bites are so easy and the perfect treat or after school snack! They’re made with simple ingredients like almond butter and gluten-free oats and sweetened with your choice of honey or maple syrup!


Ingredients

Scale
  • 1 cup creamy all-natural cashew or almond butter
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten free old-fashioned rolled oats
  • 1/2 cup unsweetened flaked coconut (I used this kind)
  • 1/2 cup chocolate chips
  • 3 tablespoons chia seeds

Instructions

  1. In a large mixing bowl combine the nut butter, maple syrup, and vanilla extract.
  2. Add the oats, coconut, chocolate chips, and chia seeds and mix until well combined and it resembles cookie dough.
  3. Place the “dough” in the refrigerator for 5 minutes to chill.
  4. Once the mix has chilled, take it out of the fridge and use a tablespoon measure to scoop the dough and then form it into small balls by rolling them in between your hands.
  5. Enjoy! Store any leftovers in an air-tight container in the fridge or freezer.
