Ingredients
Scale
- 3 ripe whole medium-large peaches, washed, halved vertically, and pit removed
- 1/4 cup blanched almond flour
- 1/2 cup whole grain oats
- 1/2 teaspoon ground cinnamon
- 1/4 cup light brown sugar
- pinch of salt
- 1/4 cup unsalted butter, cubed
- caramel sauce, for serving
- vanilla ice cream, for serving
Instructions
- Preheat oven to 350 degrees and lightly grease a 9×9 baking dish.
- Place the peaches, cut side up, in the baking dish.
- Add the almond flour, oats, cinnamon, brown sugar, and salt to a mixing bowl. Use a fork to whisk together. Add the cubed butter to the mixing bowl and then use your hands to work the butter into the dry ingredients until a clumpy dough like texture begins to form.
- Divide the crumble mixture evenly between the cut peaches. Use your fingers to gently press the crumble mixture into the center cavity of the peach as well as pile on top.
- Bake the peaches at 350 degrees for 30-35 minutes until tender. This may take more or less time depending on the size of your peaches. Use a fork or skewer to poke the side of the peach and test for tenderness.
- Allow the peaches to rest for 5-10 minutes before serving with vanilla ice cream and caramel sauce. Enjoy!
