This Waldorf Chicken Salad recipe is great to prepare ahead of time for a healthy lunch or snack! Made with tender chicken, fresh fruit, veggies, and a creamy herbed dressing, it’s sure to become a meal prep staple. 


  • 3 cups cooked and diced chicken breast
  • 1 medium pink lady or honey crisp apple
  • 1/2 cup diced celery
  • 2 tablespoons finely minced red onion
  • 1/2 cup halved seedless grapes
  • 1/2 cup chopped toasted walnuts
  • 2 tablespoons minced fresh chives
  • 2 tablespoons parsley, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup plain greek yogurt
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon garlic powder
  • 1 tablespoon lemon juice


  1. To a large mixing bowl add the chicken breast, apple, celery, red onion, grapes, walnuts, and herbs.
  2. Whisk together the mayonnaise, greek yogurt, mustard, salt, pepper, garlic powder, and lemon juice until well combined.
  3. Pour the dressing mixture over the chicken salad ingredients. Stir until well combined.
  4. Serve immediately or chill until ready to serve.
