- 3 cups cooked and diced chicken breast
- 1 medium pink lady or honey crisp apple
- 1/2 cup diced celery
- 2 tablespoons finely minced red onion
- 1/2 cup halved seedless grapes
- 1/2 cup chopped toasted walnuts
- 2 tablespoons minced fresh chives
- 2 tablespoons parsley, chopped
- 1/4 cup mayonnaise
- 1/4 cup plain greek yogurt
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 1/4 teaspoon garlic powder
- 1 tablespoon lemon juice
Instructions
- To a large mixing bowl add the chicken breast, apple, celery, red onion, grapes, walnuts, and herbs.
- Whisk together the mayonnaise, greek yogurt, mustard, salt, pepper, garlic powder, and lemon juice until well combined.
- Pour the dressing mixture over the chicken salad ingredients. Stir until well combined.
- Serve immediately or chill until ready to serve.
