Ingredients

Sloppy Joe Sauce

  • 2 teaspoons yellow mustard
  • 1/4 cup brown sugar or coconut sugar
  • 6 oz canned tomato paste
  • 1/2 cup water
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Ground Turkey Mixture

  • 1 teaspoon avocado oil
  • 1 pound dark meat ground turkey
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 small green bell pepper, diced
  • salt and pepper, to taste

For Serving

  • 4 brioche buns
  • 2 tablespoons butter
  • pickles
  • pickled onions

Method

  1. Make the Sloppy Joe Sauce: Add all of the sauce ingredients to a mixing bowl and whisk together until well combined. Set aside.
  2. Make the Sloppy Joe Mixture: Heat a large skillet over medium-high heat. Once hot, add the avocado oil and then add the ground turkey. Brown the ground turkey until no longer pink, breaking it up as it cooks.
  3. Once the meat has browned add the diced onion, garlic, and bell pepper to the skillet along with a pinch of salt and black pepper. Continue to cook for 3-5 minutes until the onion is tender and translucent.
  4. Next, lower the heat to low and pour in the sloppy Joe sauce. Stir until well combined and let simmer on low for 10-12 minutes. The sauce should thicken a bit as a it simmers.
  5. Toast the buns: While the sauce is simmering toast the buns. Heat a large skillet or griddle of over medium heat. Add the butter and swirl or push around until melted. Place the buns, cut side down, and toast for 30 seconds until golden brown.
  6. Assemble the sandwiches: Top the toasted brioche buns with the sloppy Joe mixture, pickles, and pickled onions. Serve and enjoy!
