Ingredients

  • tablespoon avocado or olive oil
  • 1 pound ground turkey (dark meat)
  • 1 small to medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small green bell pepper, diced (roughly 1/2 a cup)
  • 115 oz can black beans, drained and rinsed
  • 14 oz can Green Chiles
  • 114.5 oz diced tomatoes and their liquid
  • 114 oz can pumpkin puree
  • 1 1/2 cups chicken or veggie broth
  • 1 dried bay leaf

Chili Spice Blend

  • 1 1/2 tablespoons chili powder
  • 1/2 tablespoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chipotle powder (*make optional)
  • 1/4 teaspoon crushed red pepper flakes, plus more to taste (*make optional)
  • 1 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste

Method

  1. Heat a heavy bottomed pot over medium high heat. Once the pot is hot, add the oil, peppers, onions, and garlic and cook for a few minutes until they become fragrant.
  2. Next, add the ground turkey. Cook the turkey until it is no longer pink, breaking it up as it cooks.
  3. Once the ground turkey is cooked through, add in the chili spice blend, diced tomatoes, black beans, pumpkin puree, chicken broth, and bay leaf. Stir until everything is well combined.
  4. Bring the chili to a boil and then reduce the heat to a simmer. Cover and simmer the chili for 30 minutes and then give it a taste. Adjust the seasoning to taste.
  5. Serve with your favorite toppings like red onion, sour cream, and cilantro.
