Description
Hearty Turkey Pumpkin Chili made with plenty of flavorful spices, black beans, and pumpkin puree. This delicious chili is a savory and creative way to use pumpkin!

- tablespoon avocado or olive oil
- 1 pound ground turkey (dark meat)
- 1 small to medium yellow onion, diced
- 3 cloves garlic, minced
- 1 small green bell pepper, diced (roughly 1/2 a cup)
- 1 – 15 oz can black beans, drained and rinsed
- 1 – 4 oz can Green Chiles
- 1 – 14.5 oz diced tomatoes and their liquid
- 1 – 14 oz can pumpkin puree
- 1 1/2 cups chicken or veggie broth
- 1 dried bay leaf
Chili Spice Blend
- 1 1/2 tablespoons chili powder
- 1/2 tablespoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/4 teaspoon chipotle powder (*make optional)
- 1/4 teaspoon crushed red pepper flakes, plus more to taste (*make optional)
- 1 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
Instructions
- Heat a heavy bottomed pot over medium high heat. Once the pot is hot, add the oil, peppers, onions, and garlic and cook for a few minutes until they become fragrant.
- Next, add the ground turkey. Cook the turkey until it is no longer pink, breaking it up as it cooks.
- Once the ground turkey is cooked through, add in the chili spice blend, diced tomatoes, black beans, pumpkin puree, chicken broth, and bay leaf. Stir until everything is well combined.
- Bring the chili to a boil and then reduce the heat to a simmer. Cover and simmer the chili for 30 minutes and then give it a taste. Adjust the seasoning to taste.
- Serve with your favorite toppings like red onion, sour cream, and cilantro.
