1/2 cup finely chopped or grated green bell pepper
1/2 cup finely chopped or grated yellow onion
4 cloves garlic, finely minced
3 tablespoons fresh parsley
1 teaspoon paprika
1/2 teaspoon Italian seasoning
1 1/2 teaspoons salt
1/4 teaspoon black pepper
Glaze:
3/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Method
Preheat oven to 375.
Make the meatloaf mixture: Add all of the meatloaf ingredients to a large mixing bowl and use your hands or a spatula to combine the mixture.
Make the sauce: Add the ketchup, brown sugar, and apple cider vinegar to a small mixing bowl and whisk together until well combined.
Transfer the ground turkey mixture to a parchment lined baking sheet and use your hands to form the mixture into a 9×5 inch rectangle. Brush the meatloaf all over with half of the ketchup glaze.
Bake the meatloaf for 45-50 minutes minutes or until an instant read thermometer reads 165 degrees.
Remove from the oven and brush the remaining glaze on the meatloaf. Garnish with parsley before serving.
