Description

This moist and juicy Turkey Meatloaf is so easy to make and the perfect cozy weeknight dinner! Serve it with your favorite sides for a delicious meal.


Ingredients

Meatloaf:

  • 2 pounds ground turkey (dark meat)
  • 1/2 cup panko breadcrumbs
  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup finely chopped or grated green bell pepper
  • 1/2 cup finely chopped or grated yellow onion
  • 4 cloves garlic, finely minced
  • 3 tablespoons fresh parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper

Glaze:

  • 3/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat oven to 375.
  2. Make the meatloaf mixture: Add all of the meatloaf ingredients to a large mixing bowl and use your hands or a spatula to combine the mixture.
  3. Make the sauce: Add the ketchup, brown sugar, and apple cider vinegar to a small mixing bowl and whisk together until well combined.
  4. Transfer the ground turkey mixture to a parchment lined baking sheet and use your hands to form the mixture into a 9×5 inch rectangle. Brush the meatloaf all over with half of the ketchup glaze.
  5. Bake the meatloaf for 45-50 minutes minutes or until an instant read thermometer reads 165 degrees.
  6. Remove from the oven and brush the remaining glaze on the meatloaf. Garnish with parsley before serving.
