Meatloaf:
- 2 pounds ground turkey (dark meat)
- 1/2 cup panko breadcrumbs
- 2 eggs
- 1/2 cup unsweetened almond milk
- 1 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 cup finely chopped or grated green bell pepper
- 1/2 cup finely chopped or grated yellow onion
- 4 cloves garlic, finely minced
- 3 tablespoons fresh parsley
- 1 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper
Glaze:
- 3/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions
- Preheat oven to 375.
- Make the meatloaf mixture: Add all of the meatloaf ingredients to a large mixing bowl and use your hands or a spatula to combine the mixture.
- Make the sauce: Add the ketchup, brown sugar, and apple cider vinegar to a small mixing bowl and whisk together until well combined.
- Transfer the ground turkey mixture to a parchment lined baking sheet and use your hands to form the mixture into a 9×5 inch rectangle. Brush the meatloaf all over with half of the ketchup glaze.
- Bake the meatloaf for 45-50 minutes minutes or until an instant read thermometer reads 165 degrees.
- Remove from the oven and brush the remaining glaze on the meatloaf. Garnish with parsley before serving.
