Description

These Strawberry Overnight Oats make the perfect easy breakfast or even afternoon snack. They are packed with nutrition thanks to whole grain oats, chia seeds, and Greek yogurt. The addition of fresh strawberries makes these oat even more delicious. This is a great make ahead recipe to meal prep in advance for a grab and go breakfast option throughout the week.

Ingredients

Scale
  • 1 cup gluten free oats
  • 1 tablespoon chia seeds
  • 1/2 cup Greek yogurt
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup
  • 2 tablespoons cashew butter
  • 3/4 cup chopped strawberries (plus more for serving)
  • cashew butter, for serving

Instructions

  1. Add all of the ingredients to a large wide mouthed glass container with a lid and stir until everything is well combined.
  2. Cover the container and place in the fridge for at least 2 hours or up to overnight.
  3. After oats have chilled, remove them from the fridge and give them a stir. Feel free to add an extra splash of milk if you want to thin the oats out a bit. Add your toppings, serve, and enjoy!
