Description

These Snickerdoodle Energy Bites are the perfect snack or healthier treat. Made with just a few simple ingredients and have that delicious snickerdoodle cookie flavor!


Ingredients

Scale
  • 1 cup cashew butter
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1 cup gluten-free rolled oats
  • 3 tablespoons chia seeds
  • 1 tablespoon cinnamon 

For Rolling

  • 1 tablespoon coconut sugar
  • 1/2 teaspoon cinnamon
  • pinch of sea salt (optional)


Instructions

  1. Add all of the ingredients to a food processor.
  2. Pulse the food processor until all of the ingredients are well combined and a dough has formed. Scrape down sides of the food processor if needed.
  3. Use a cookie dough scoop or tablespoon to scoop out the dough. Then, use your hands to roll the dough into balls.
  4. Make the Cinnamon Sugar Mixture: Add the coconut sugar, cinnamon, and pinch of salt to a small bowl and mix until well combined.
  5. Roll the balls in the cinnamon sugar mixture. 
  6. Enjoy! Store any leftovers in an air-tight container in the fridge or freezer.
