These Peach Overnight Oats are the perfect healthy breakfast or snack to make during summer peach season! Made with Greek yogurt, fresh peaches, oats, nut butter, chia seeds, and warm spices, they’ve got the best flavor and perfect touch of sweetness. Prep them in advance for a grab-and-go option throughout the week!

- 1/2 cup plain Greek yogurt
- 1 cup unsweetened almond milk
- 1 tablespoon almond butter
- 1 teaspoon vanilla extract
- 1 cup gluten free old-fashioned oats
- 1 tablespoon chia seeds
- 1/4 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 cup peeled and small diced peaches, plus more for topping
Instructions
- Add the Greek yogurt, almond milk, almond butter, and vanilla extract to a mixing bowl and whisk until well combined.
- Next, fold in the oats, chia seeds, spices, and peaches. Transfer the mixture to a Weck jar or mason jar with lid.
- Cover the containers and place in the fridge for at least 2 hours or up to overnight.
- After oats have chilled, remove them from the fridge and give them a stir. Feel free to add an extra splash of milk if you want to thin the oats out a bit. Top the oats with more fresh chopped peaches before serving.
