Description

This Lemon Rice Recipe is garlicky, buttery, with lots of lemon juice and zest. Flavorful and quick to prepare, it’s an easy way to add flavor to all your meals! 


Ingredients

Units Scale
  • 4 tablespoons salted butter or olive oil
  • 4 cloves garlic, finely minced
  • 1/4 cup diced shallot
  • juice and zest of 1 lemon
  • 2 cups basmati rice (or another long grain white rice), rinsed and drained
  • 2 cups low sodium chicken broth
  • 1 cup water
  • 1 teaspoon kosher salt

Instructions

  1. Heat a large saucepan, with a lid, over medium-high heat. Once hot, add the butter and melt. 
  2. Once the butter has melted, add the shallot and garlic and sauté until the shallot is translucent. 
  3. Next, add the rice to the pan and stir until well combined and covered in the butter. Toast for 30 seconds to a minute, stirring constantly. 
  4. Add the chicken broth, water, lemon juice, lemon zest, and salt to the pan and stir until combined. 
  5. Bring the rice to a boil and then cover with a lid and turn the heat to low. Cook the rice for 15 minutes and then remove from the heat, with the lid on, and allow the rice to continue to steam for 5-10 minutes.
  6. Fluff the rice with a fork and then garnish with additional lemon zest as desired.
