- 4 medium russet potatoes
- sea salt
- olive oil
- optional toppings:
- butter, salt, pepper
- thinly sliced green onions, Greek yogurt, salt, pepper,
- loaded: shredded cheddar, sliced green onion, Greek Yogurt, bacon bits, salt, and pepper
Instructions
- Preheat oven to 425 degrees
- Thoroughly clean the potatoes and remove any dirt or grit.
- Prick the potatoes a few times all over with a fork. Drizzle with olive oil and then use your hands to rub the oil all over the skin of the potatoes.
- Place the potatoes on a sheet pan lined with parchment paper and then sprinkle salt all over the skin of the potatoes.
- Bake the potatoes for 45-60 minutes until completely tender. You should easily be able to stick a skewer of toothpick into the thickest part.
- Once the potatoes are tender, remove them from the oven.
- Let the potatoes cool slightly (for 5 minutes) and then use a sharp knife to split the top of the potato open and give it a gentle squeeze inward.
- Add your favorite toppings and enjoy!
