Description

This Honey Mustard Kale Salad is going to be your new favorite kale salad recipe. It has the best creamy, tangy honey mustard dressing and the kale is so it’s tender and not bitter. Then you add sweet apples, salty feta cheese, dried cranberries, lemon zest and candied pecans for the perfect finish.


Ingredients

Scale
  • 8 cups chopped lacinato/tuscan kale
  • 1/2 teaspoon lemon zest
  • 1 small pink lady apple, thinly sliced
  • 1/3 cup feta cheese
  • 1/3 cup dried cranberries
  • 1/3 cup chopped candied pecans
  • one batch creamy honey mustard salad dressing 


Instructions

  1. Add the chopped kale to a large mixing bowl. Add a pinch of salt and pepper and pour 1/4 cup of the dressing over the kale. Massage the dressing into the kale. Let the kale sit and rest for at least 30 minutes.
  2. After the kale has rested add the lemon zest, sliced apple, feta cheese, cranberries, and candied pecans. Toss until well combined.
  3. Season to taste with more of the dressing, salt, and pepper. Serve and enjoy!
