Healthy Banana Nut Muffins

Ingredients

  • 1 1/2 cups finely ground oat flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • pinch of sea salt
  • 1 cup mashed banana (23 very ripe/brown bananas)
  • 3/4 cup plain Greek yogurt
  • 2 large eggs
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts, plus more for the top

Method

  1. Preheat your oven to 350 degrees.
  2. Add the oat flour, brown sugar, cinnamon, baking soda, baking powder, and sea salt to a mixing bowl. Stir until well combined.
  3. Add the mashed banana, plain Greek yogurt, eggs, and vanilla extract to a bowl. Whisk together until well combined.
  4. Add the dry ingredients to the wet ingredients, stirring until everything is well combined.
  5. Fold in the chopped walnuts.
  6. Transfer the batter to a muffin tin that has been lined with muffin/cupcake liners. Fill each muffin well two-thirds of the way full. Sprinkle a few chopped walnuts on top.
  7. Bake the muffins at 350 degrees for 15-20 minutes or until a toothpick comes out clean when inserted.
  8. Serve them warm, straight out of the oven, or enjoy them the next day.
