Description

Ground Turkey Lettuce Wraps feature crisp lettuce leaves wrapped around a tangy Asian-inspired ground turkey filling. High-protein and delicious, they’re a flavorful appetizer or main course perfect for meal prep! 


Ingredients

  • 1 tablespoon avocado oil
  • 1 pound ground turkey
  • 1 tablespoon minced fresh ginger
  • 1 small carrot, grated
  • 4 cloves garlic, minced
  • 3 tablespoons coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • juice of 1 lime, plus more for serving
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup sliced green onion, plus more for serving
  • Bibb/Butter lettuce leaves, for serving

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Once hot, add in the avocado oil and then add the ground turkey. Brown the meat, breaking it up as it cooks.
  3. Once the ground turkey has browned add the ginger and grated carrot and cook for 3-4 minutes until the carrot has softened.
  4. Next add the garlic, coconut aminos, rice vinegar, sesame oil, lime juice, and spices. Stir until well combined and then cook for another 2-3 minutes.
  5. Turn off the heat and then stir in the green onion. Serve the ground turkey mixture in lettuce leaves (around 1/4 cup) and topped with additional green onion and a squeeze of lime juice.
