Description

These Cottage Cheese Overnight Oats are slightly sweet, creamy, and so easy to make! They’re perfect to prep in advance and great to grab and go on busy mornings or to enjoy as an afternoon snack. You can serve them on their own, or add your favorite toppings!


Ingredients

Scale
  • 1/2 cup low fat cottage cheese
  • 1 cup unsweetened almond milk, plus more as needed
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup
  • 1 cup gluten free old-fashioned oats
  • 1 tablespoon chia seeds

Toppings

  • fresh berries
  • sliced almonds


Instructions

  1. Add the cottage cheese, almond milk, vanilla extract, and maple syrup to a blender. Blend until smooth. 
  2. Transfer the cottage cheese mixture to a mixing bowl and then fold in the oats and chia seeds. Stir until well combined. 
  3. Separate the oats into two separate mason jars with lids and let the oats chill overnight.
  4. After the oats have chilled, remove them from the fridge and give them a stir. Feel free to add an extra splash of milk if needed. 
  5. Top the oats with fresh berries before serving.
