Description

Make these cookie dough overnight oats with simple ingredients and just a few minutes of prep time for an easy breakfast or snack!

Ingredients

Scale
  • 1 cup gluten free old-fashioned oats
  • 1 tablespoon chia seeds
  • ½ cup plain Greek yogurt
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey
  • 1/4 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons creamy cashew butter
  • 2 tablespoons mini chocolate chips, plus more for topping

Instructions

  1. Add all of the ingredients to a large wide mouthed glass container with a lid (like a weck jar) and stir until everything is well combined.
  2. Cover the container and place in the fridge for at least 2 hours or up to overnight.
  3. After oats have chilled, remove them from the fridge and give them a stir. Feel free to add an extra splash of milk if you want to thin the oats out a bit. Add your toppings, serve, and enjoy!
