Description

The best Chunky Monkey Baked Oatmeal made simple ingredient like old-fashioned oats, bananas, and maple syrup for a little sweetness. If you love chunky monkey ice cream then you’re going to love this baked oatmeal for a delicious and hearty breakfast or snack! 


Ingredients

  • 2 eggs
  • 1 3/4 cups almond milk
  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 1/4 cup melted butter or coconut oil
  • 2 teaspoons vanilla extract
  • 2 1/4 cups old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts, plus more for the top
  • 1/4 cup unsweetened shredded coconut
  • 1/3 cup chocolate chips, plus more for the top


Instructions

  1. Preheat oven to 350 degrees.
  2. To a large mixing bowl, add the eggs, almond milk, mashed banana, maple syrup, melted butter, and vanilla extract. Whisk all of the wet ingredients together until well combined.
  3. Next, add the oats, ground cinnamon, baking powder, and salt to the mixing bowl and stir until well combined.
  4. Next, fold the walnuts, shredded coconut, and chocolate chips into the batter until well combined.
  5. Transfer the oatmeal batter to a greased 9×9 baking dish and top with extra chopped walnuts and chocolate chips.
  6. Bake at 350 degrees for 35-40 minutes until the oatmeal is set.
