Ingredients

  • 2 cups cooked and diced/shredded chicken breast
  • 1/2 cup mayonnaise
  • 1/4 cup celery, chopped
  • 1 tablespoon red onion, diced
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Chipotle powder
  • 1/3 cup roasted red peppers, diced
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon apple cider vinegar
  • juice of one lime

Method

  1. Add all of the ingredients to a mixing bowl and stir until well combined.
  2. Serve over greens with sliced avocado, tomatoes, and garnished with cilantro.
