Description

This Cucumber Avocado Salad combines fresh cucumber, creamy avocado, crisp radish, and a tangy, herby buttermilk ranch dressing. Quick, easy, and refreshing, it’s the perfect side dish or appetizer! 


Ingredients

  • 4 Persian cucumbers, sliced in half moons
  • 2 large avocados, sliced
  • 1 bunch radishes, thinly sliced
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped chives
  • 1/4 cup whole milk greek yogurt
  • 2 tablespoons buttermilk
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 clove garlic, grated

Instructions

  1. Whisk together the greek yogurt, buttermilk, chopped dill, chopped chives, salt, pepper, and garlic until well combined. 
  2. Next, add the cucumbers, avocados, and radishes. Toss until well combined and set aside.
