Description

This Blackberry Oatmeal Bake is made with whole-grain oats, a touch of maple syrup for sweetness, and plenty of fresh blackberries. It’s the perfect choice for a filling breakfast or heart healthy snack!


Ingredients

  • 2 eggs
  • 1 3/4 cups almond milk
  • 1/2 cup maple syrup
  • 1/4 cup melted butter
  • 2 teaspoons vanilla extract
  • 2 1/2 cups gluten free rolled oats
  • 1/4 cup shredded coconut
  • 1/4 cup slivered almonds
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups fresh blackberries (1/2 reserved for the top)

Instructions

  1. Preheat oven to 350 degrees and grease a 11×7 pan with cooking spray or butter.
  2. To a large mixing bowl, add the eggs, almond milk, maple syrup, melted butter, and vanilla extract. Whisk all of the wet ingredients together until well combined.
  3. Next, add the gluten free oats, shredded coconut, slivered almonds, baking powder, ground cinnamon, and salt to the mixing bowl and stir until well combined.
  4. Lastly fold 1 1/2 cups of fresh blackberries into the oat batter and then sprinkle the remaining on top.
  5. Transfer the blackberry oatmeal batter to a greased 11×7 baking dish.
  6. Bake at 350 degrees for 25-30 minutes until the oatmeal is just almost set.
  7. Let cool for 10 minutes, slice, and then serve.
