Description

Banana Chocolate Chip Energy Balls are an easy, no-bake treat that comes together with just 8 simple ingredients! Sweet and chewy with chocolate in every bite, they’re the perfect meal prep snack or after dinner sweet treat!


Ingredients

  • 1 cup creamy all natural cashew butter
  • 1/3 cup mashed banana
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 2 cups old-fashioned (rolled) oats
  • 1/4 cup chia seeds
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup dark chocolate chips

Instructions

  1. Add the cashew butter, mashed banana, maple syrup, and vanilla extract to a mixing bowl and stir until well combined. 
  2. Next, add gluten free rolled oats, chia seeds, chocolate chips, and cinnamon to the bowl. Stir until everything is well combined and you have a “dough”.
  3. Place the mixture in the freezer for fifteen to twenty minutes to chill and firm up. 
  4. Remove the dough from the freezer and use a cookie dough scoop to scoop the dough and then use your hands to roll the dough into balls. Store the energy bites in an air-tight container in the fridge or freezer.
