Description

This Strawberry Spinach Salad is going to be your new favorite way to enjoy fresh spinach. Juicy strawberries, creamy avocado, crisp red onion, candied pecans, and salty feta all come together with a sweet poppy seed dressing. It’s quick, easy, and the perfect warm weather side dish or appetizer! 


Ingredients

  • 10 ounces fresh spinach
  • 2 tablespoons chopped fresh basil, plus more for garnish
  • 2 cups whole strawberries, hulled and sliced lengthwise
  • 1 large avocado, sliced
  • 1/3 cup chopped candied pecans
  • 1/3 cup thinly sliced red onion
  • 4 ounces feta cheese, crumbled

Poppyseed Dressing 

  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • zest of one lemon
  • 1 tablespoon dijon mustard
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • pinch of black pepper
  • 1 tablespoon poppy seeds

Instructions

  1. Make Dressing: Add all of the dressing ingredients to a small mixing bowl or mason jar with a lid. Whisk or shake the ingredients together until well combined, smooth, and creamy. 
  2. Make the Salad: Add the spinach and chopped basil to large mixing bowl. Toss with a few spoonfuls of vinaigrette until lightly dressed and then transfer to a serving bowl or platter. 
  3. Top the salad with all of the remaining toppings and serve with additional vinaigrette.
