Delicious Shaved Brussel Sprout Salad

This healthy brussel sprout salad is proof that your sprouts are good for more than just roasting. While I love a good roasted brussel sprout recipe, sometimes you just need to switch things up. 

Especially around the warmer spring and summer months, there is nothing better than a flavorful, crisp, and delicious salad. This easy salad uses shaved brussel sprouts as the base of this hearty salad. 

The sprouts are crisp and stand up to the creamy dressing. When you add a little smoky bacon, dried cranberries, crunchy almonds, and red onion to the mix, things get even better. 

This salad is so simple and easy to make. It will literally take you ten minutes. It is a great side dish to bring to a summer potluck or barbecue. I know you will love it!

Brussel Sprout Salad Ingredients

Shaved brussel sprouts: You can shred your own brussel sprouts or buy pre-shaved sprouts to keep things super easy

Bacon: Bacon and brussel sprouts go together like peanut butter and jelly. The smoky flavor of the bacon works so well in this salad. Bake a few pieces in the oven until crispy and then chop it up. 

Pecans: For a little crunch and healthy fats

Red onion: Keep the red onion thinly sliced so you don’t get a huge chunks of onion throughout the salad.dd

Dried cranberries: They add a little sweetness to the salad. If you do not have dried cranberries on hand, or if you just are not a fan of them, feel free to use golden raisins or raisins instead.

The Perfect Creamy Dressing

The star of this salad is the dressing. The salad dressing is perfectly creamy, tangy, and just a little sweet thanks to pure maple syrup. It pulls all of the salad ingredients together perfectly. 

This is what you need to make the dressing:

  • Mayonnaise: a mayo that is made with a high quality oil like avocado oil is always the best choice. This is my favorite brand. 
  • Whole grain dijon mustard: a little goes a long way and adds so much great flavor to the dressing.
  • Apple cider vinegar: just a little for tang and the flavor works really well with the mustard and bacon.
  • Maple syrup: just a little for sweetness and to offset the tang of the vinegar. Feel free to use honey if you do not have maple syrup.

How to Make This Shaved Brussel Sprout Salad

Step One: Add all of the salad ingredients to a large mixing bowl.

Step Two: Next make the dressing! Add all of the dressing ingredients to a small to medium mixing bowl and whisk until smooth, well combined, and creamy.

Step Three: Pour some of the dressing over the salad ingredients (I like to start with half). Then, toss the salad until all of the ingredients are well mixed, adding as much extra dressing as you would like.

Step Four: Let the salad sit in the fridge for 30 minutes before serving. Then, serve and enjoy!

Ways to Serve

This hearty shaved brussel sprouts salad is perfect all on its own but it also pairs perfectly with your favorite protein. Try it with chicken, beef, pork or fish. It is also especially great with barbecued or grilled meats as a hearty green side.

Ingredients

  • 4 cups shredded brussels sprouts
  • 1/4 cup chopped pecans
  • 1/2 cup dried cranberries
  • 4 strips bacon, cooked and chopped
  • ¼ cup thinly sliced red onion

For the Dressing:

  • 1/3 cup mayonnaise
  • 1 tablespoon whole grain dijon mustard
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic, finely minced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Method

    I’ve made this salad a few times and it is always a hit. I recently needed a vegetarian version so I subbed roasted mushrooms for the bacon. Everyone loved it.
