Description

This easy Dill Pickle Chicken Salad recipe is made with tender chicken, fresh veggies, dill pickles, and has tangy dressing to pull it all together. If you love pickles you’re going to love this chicken salad, plus it’s great for meal prep!


Ingredients

  • 3 cups chopped chicken breast
  • 1/2 cup diced celery
  • 1/4 cup finely minced red onion
  • 1/4 cup diced dill pickles
  • 3 tablespoons chopped dill
  • 1/3 cup mayonnaise
  • 1/4 cup plain greek yogurt
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon garlic powder
  • 2 tablespoons dill pickle juice

Instructions

  1. To a large mixing bowl add the chicken breast, celery, onion, diced pickles, and chopped dill.
  2. Whisk together the mayonnaise, greek yogurt, mustard, salt, pepper, garlic powder, and dill pickle juice until well combined.
  3. Pour the dressing mixture over the chicken salad ingredients. Stir until well combined.
  4. Serve immediately or chill until ready to serve.
