Description

This herby Green Goddess Chicken Salad is going to be your new favorite chicken salad recipe! Tender chicken, crisp veggies, and walnuts all come together with a delicious green goddess dressing that’s made with Greek yogurt and plenty of fresh herbs. Everyone is going to love this delicious spin on classic chicken salad!


Ingredients

  • 1/2 cup nonfat plain Greek yogurt
  • 2 tablespoons mayonnaise
  • juice of 1 lemon
  • 1 teaspoon dijon mustard
  • 2 cloves garlic, finely minced, grated, or crushed
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced green onion
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh tarragon
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh parsley
  • 1 pound poached chicken breast, chopped
  • 1/3 cup thinly sliced red onion
  • 1/2 cup diced celery
  • 1/2 cup walnuts, chopped


Instructions

  1. Add the Greek yogurt, mayonnaise, lemon juice, and Dijon Mustard to a mixing bowl and whisk until smooth.
  2. Next add the minced garlic, salt and pepper, and chopped fresh herbs to the yogurt dressing and stir until well combined.
  3. Lastly, add the red onion, celery, walnuts, and chopped chicken breast to the dressing and stir until well combined.
  4. Serve the chicken salad immediately or let it sit in the fridge before serving.
