Description

These Gluten Free S’mores Bars have all the classic flavor of s’mores with the added sweetness and soft, chewy texture of chocolate chip cookies. These bars are so easy to make and absolutely delicious!


Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups mini marshmallows (plus 1/3 cup for the top)
  • 4 gluten free honey graham crackers, chopped (plus 2 more for the top)
  • 1 oz semi-sweet chocolate bar, chopped
  • 1 1/2 cup of gluten free all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 10 tablespoons butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • flaky sea salt, to top

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9X9 baking dish with parchment paper and lightly grease. Set aside.
  2. Prepare your mix-ins: Add the chocolate chips, mini-marshmallows, and chopped graham crackers to a mixing bowl. Toss until well combined.
  3. To a medium mixing bowl, add the flour, baking soda, baking powder, and salt. Whisk until well combined and set aside.
  4. To another mixing bowl, add the granulated sugar, dark brown sugar, melted butter, and vanilla. Beat with a hand mixer for 2-3 minutes until well combined. Next, add the egg and egg yolk to the mixture. Beat again until incorporated.
  5. Fold the flour mixture into the wet ingredients and stir until well combined. Then, add the mix-ins to the dough and fold until evenly distributed.
  6. Transfer the dough to the prepared baking dish and gently spread into an even layer.
  7. Top the dough with chopped chocolate, mini-marshmallows, and the crushed graham cracker.
  8. Bake the bars at 350 degrees for 20-25 minutes or until the edges are set and the marshmallows on top are golden brown. It’s normal for the edges to be a bit bubbly and caramelized. Remove the bars from the oven and top with flaky sea salt.
  9. Let the bars cool in the pan for 10-15 minutes until they have set. Slice into 16 bars and enjoy!
