These Egg Bites with Cottage Cheese are the perfect high-protein, make-ahead breakfast! They’re easy to make, easy to customize, and perfect to meal prep for a quick breakfast on busy mornings!

- 8 large eggs
- 1 cup 2% cottage cheese
- 1/2 cup grated sharp cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon hot sauce
- 1/4 cup chopped chives
- cooking spray
- silicone muffin pan or muffin liners
Instructions
- Preheat oven to 350 degrees Fahrenheit. If you’re using a silicone muffin pan, lightly spray it with cooking spray. Or, you can line a regular muffin pan with cupcake liners.
- Add the eggs, cottage cheese, cheddar cheese, salt, pepper, onion powder, garlic powder, and hot sauce to a blender. Blend until smooth.
- Pour the egg mixture evenly into the prepared muffin cups. Sprinkle egg cup with chives.
- Bake the egg bites for 20-22 minutes until they are set. The bites will be tender but they should be set and not runny. Remove from the oven and let cool before serving.
