Description

These Egg Bites with Cottage Cheese are the perfect high-protein, make-ahead breakfast! They’re easy to make, easy to customize, and perfect to meal prep for a quick breakfast on busy mornings! 


Ingredients

  • 8 large eggs
  • 1 cup 2% cottage cheese
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon hot sauce
  • 1/4 cup chopped chives
  • cooking spray
  • silicone muffin pan or muffin liners

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. If you’re using a silicone muffin pan, lightly spray it with cooking spray. Or, you can line a regular muffin pan with cupcake liners.
  2. Add the eggs, cottage cheese, cheddar cheese, salt, pepper, onion powder, garlic powder, and hot sauce to a blender. Blend until smooth.
  3. Pour the egg mixture evenly into the prepared muffin cups. Sprinkle egg cup with chives.
  4. Bake the egg bites for 20-22 minutes until they are set. The bites will be tender but they should be set and not runny. Remove from the oven and let cool before serving.
